sugar dough:
flour 375 g
milk powder 2 tablespoon
caster sugar 90 g
butter 250 g
egg 1
vanilla essence 1/4 teaspoon
syrup:
sugar 100 g
water 240 ml
filling:
3 eggs
syrup 320 g
evaporated milk 40 g (fresh milk)
vanilla essence - a few drops
method:
- sugar dough: sift flour & milk powder together, rub in butter & caster sugar. Add in egg & vanilla essence to form a dough. then, refrigerate for 1/2 hour
- syrup: cook sugar & water until boiling cool
- filling: beat eggs lightly, mix with remaining ingredients. through sieve, keep aside.
- roll out sugar dough & line onto tart cases. pour the filling. bake at preheated oven at 180c for 20-25 minutes/ until the filling is firm.
